tcpdump is one such tool, even if a bit crude..

There also exists several smarter sniffers that can sometimes even
reconstruct the TCP streams for you.

However, what I do when I need full access to the traffic is that I put
a small proxy either in front of Squid or as a parent, and this proxy
does no more than logs the traffic.
