maximum_object_size_in_memory
cache_replacement_policy
memory_replacement_policy
ipcache_size
fqdncache_size
Which storage scheme are you using?
Can you post your relevant configs of your squid.conf?

My proxy server which serves 2000-3000 clients is currently using 650 MB
of memory despite running for more than 55 days.
